Paul Freedman (Yale University): “Seasonal and Local Dining in the Middle Ages”
Prof. Freedman is the author of Out of the East: Spices and the Medieval Imagination (2008) and the editor ofFood: The History of Taste (2007). His research focuses on medieval Spain, peasantry, luxury products, and the history of cuisine.
